Monococcus

We have combined two varieties with blond and black ears from different evolutions in Middle East region. This biodiversity gives strength in the field thanks to the vegetable intelligence of the seed and gives the flour an unprecedented flavor.

Dicocco

We have joined some varieties of black, turquoise and bronze ears to the family of the dicocco spelled typical of Garfagnana. We sow and work them together. This makes our spelled flour able of generating pleasant relief during tasting.

Spelta

We have selected a dark ear variety and it offers excellent taste. With this spelled we are still at the initial stage of seed multiplication.
